I found myself at the height of strawberry season without any cream in the house. My 12 year-old daughter wanted to make a strawberry dessert, so I handed her Betty Crocker’s 1950 “Picture Cook Book” edition to find something that didn’t require cream. She discovered the “Berry Basket Cake”.
The result was a pretty dessert that was just the right degree of sweetness. The strawberries are definitely the star of this cake. We let it sit for a while, so the juices of the berries soaked through the meringue and the cake. If we would have served it right after putting the berries on top, I think the meringue would have been crispy rather than marshmallowy.
